TLDR; time to look for alternatives

Had a negotiation appointment with our CTO recently, due to the fact that I am going to finish my apprenticeship by the current year. As I heard from colleagues that the average pay for a finished apprentice isn't really the best, I wanted to try myself at bargaining it a bit higher.. So we went into the meeting and I brought up my argument, bossman just shrugs it off as laughable and that he can do it 100x better, so why should I define my pay on that.. The appointment was just very uncomfortable after that, no appreciation of my efforts at all. Not like I already work like a normal employee just with a quarter of the pay 😑

As you said in the TL;DR - because appreciation and being taken serious is important for a future working relationship. (Being a past apprentice is in that regard a bit awkward sometimes anyway. 😅)
Just don't expect other companies to pay a lot more when you just finished your apprenticeship.

I was in the exact same position as you from 2010-2014. In my naivete, I stayed thinking I would get paid what I'm worth. In August 2014, I stated my case for a raise and the same situation happened. I left a week later without notice. The company went out of business 6 months later, going through 3 replacements.

If you know your stuff, find someone who knows what it's worth. You aren't doing yourself any favors staying or even dwelling about it.

    Keep your chin up!
