It depends on your local data protection laws. For example if you have a server in the US, you cannot ensure that the US police and so don’t access the data. But such things could be forbidden in your country. For example with the GDPR in the EU an company should never use a server outside the EU for data of EU customers.
As a german I would always use only german servers.
