Have any of you ever asked to get switched onto another project? And if so, was your request successful and what was the consequence?

Yep. I asked to switch projects. They were like "yeah no problem". Three months later, it still hadn’t happened. So I quit

    Yes, it's a complicated balance.

They didn't want to let me because I had high bus factor in the previous project.

They had to let me because they knew I would leave otherwise.

In the end, it's not something unreasonable, but you need to be prepared to either accept the fact that your goal might not align with your company's, or leave.

As a consultant, a lot of times (different Client). Usually got interviewing and a new client within 2-3 months.

I once told an employee "wow, you're so lucky you've had the privilege to grow that product over all those years." To which he replied "yeah well.. you're so lucky you can quit any time. I've really had it with this product"
