Just create a mail filter that marks the domains emails as spam and deletes them. Also do not unsub, so they will slowly fuck their sender reputation when they keep spamming to you.

I can pretty much do the same with youremail+anything@gmail.com and then you just block anything coming to that email. Also mail.com offers creation of alias accounts and you can block incoming from those too. :)
I think a VPS might be a bit too much for solving this problem 😊
