At that point you're not a website dev, you're a hosting company.
If you host your clients websites (one path to insanity) then just do a blank wordpress install, install the plugin and let the client have at it.
In the hosting fees, charge exhorbitant hourly rates (minimum charge 1hr as soon as they contact you) for the inevitable "can you fix my fuckup", "can you show me how to do X", "can you restore from backup", "can you tweak my design" etc
Alternatively, offer to build the site for them for your normal rate -

There has to be more to this than you have described. If not, just set them up with what they requested and charge accordingly. If they need more than that, charge accordingly. -
Condor323325yThe hackingvision.com website uses (or used to anyway, not sure if it still does) WordPress and Elementor for writing posts as well. And of course the site owner having a mentality to do everything in plugins didn't help either... I think I've still got administrative access to it, but that thing was a complete clusterfuck. Think Facebook level bloat and then raise that to at least ^2. I hope you'll be able to let the client do the blogging because it's a nerve-wracking experience...
