As someone who is extremely interested in dev and wanting to learn as much as I can, where is the best starting point to launch from?

C is always a great place to start.

It's a trial by fire that will teach you more about how computers work and how to be a good programmer than any other starting point.

    Where are you now?
Where do you want to go?

This field is insanely huge, knowing where to start depends on where you want to go.

Or... do C, you'll age quicker then most devs.

With a project. What do you want to do? The biggest problem is losing motivation which will happen if you've no personal interest in what you do. If you have chosen your project it becomes just a matter of solving little subproblems and Google will help you with that quite successfully.

Just trying out your skills and learning from your mistakes is in my opinion still the best way to really learn something, even though it might be rather slow.
