Look at using Ansible it will make you server setup much easier you just write a few yaml files and away you go. Version control your Ansible project and you can improve it over time and use it to setup multiple servers.

Ahhhhhh, I wake up screaming and realise it was only a nightmare...

The fields in question are not static or defined in any useful way they are named custom1-20 and are all varchar(200) no indexing and they can contain anything the customer wants. A better solution would be to create a table for the declaration of a new field and another for storing the value linked to the owning row in the table allowing for any degree of customisation in the structure maybe not the most queryable but effective and extendable.

I like browns good for typing and gaming. Blues are my second choice though. Enjoy the new keyboard.

Metal (anything loud and fast). I was introduced to a band called Eskimo Callboy recently, they are a mixture off Metal and EDM combined worth a listen if you like something a bit different.

Use a hosted git repo bitbucket or github. commit little and often; small change commit. I always finish the day by committing and pushing a working version. Uncommitted code doesn't exist.
