could try what I used to do, phone in a zip lock bag with Evernote. it works really well but it's one of those YMMV kinda things. probably be better off trying one of those new water proof phones though

Often they do not come back. You may want to low tech it until a better solution. Maybe voice record it on a cheap recorder.

Keep a marker in the bathroom and doodle on the tiles? A marker that needs to be removed with alcohol, so the water doesn't wash it away.

Unless you have an alcohol shower, which seems unlikely, although not actually impossible.
