Been asked to do things out of my area, like print stuff, make videos, institutional document guides, etc etc etc

If they ask you do that, fine. Do it. However, make sure you cover yourself massively.

Send an email to you pm / manager putting a disclaimer on all the tasks outside your area of expertise. I.e. If you're a dev don't get blamed if some video editing you got forced to do is naff.

I've had to this a few times when management simply won't listen to me.
