Use whatever you feel confortable with. I would go with centos because i know it best and like redhat. You will use the same mailserver on every distro. Therefote the distro it runs on is mostly irrelevant.

I really like mine. Have one with fans so it doesnt get to hot.
I like the terminal and compatibility with a lot out of the box. I would recommend it, but take a look at ebay or alike. There are sometimes really great offers.
I also like the touchpad a lot. Keyboard is ok i guess, mostly use an external one anyways.

I also use mine to make my old printer network capable. He has no wifi or lan port. So i pluged it in to my pi and set it up as a network printer there. -
Use it as a network wide adblocker with https://pi-hole.net

How do you handle the screen reflection?

I work with OSX and Windows, that's where the shortcut struggle really begins.
Especially when your Keyboard has a German layout, you live in Switzerland but you type in US.
Windows+L for example searches or locks your screen. -

We always keep our leftovers and eat them the next day for lunch. Sometimes we eat the same meal four times...
At parties or other visits, the leftovers get split betweent everyone. So you have no leftovers and everyone is happy, that they don't have to cook the next day. -
