Linux is a fantastic platform. However from the versatility perspective, you should choose macOS. My reasoning behind this is because you can use Virtual Machines for other platforms on one physical host machine. With macOS being strict with its EULA, and other legal language, it's not good practice to build a hackintosh, or use macOS as a VM. As either of those two options don't work well...because yes Apple is incredibly strict with ththe use of their software.
