I had that problem with docker mount as well, confusing as fuck.

I would prefer all the stuff that comes with this image came in the form of a script because I might prefer a specific image of a stack or alpine

And it does actually come in (sort of) script. As I mentioned in the article, you can simply use certbot: https://certbot.eff.org/

Then you'll just set up a cronjob to run 'sudo certbot renew'
