1. Want to change the business flow during UAT and decide the deadline to be less than 4 weeks, even though that's how the business flow stated on the docs
2. He threatening us not to pay if it isn't done, even though he's not the one paying us
3. He said time isn't a problem because he can provide a table and chair that is put in front of his table

Ah, I've dealt with these before. Polite & friendly but firm emails tend to put them in their place, or just make them even more angry (which is a game I enjoy playing a bit too much.)

As previously agreed I'm afraid the only thing we'll action in UAT are bugfixes. Let us know if you want us to send across an additional time & materials estimate for the alterations to that business flow, and we'll estimate schedules at that time.

We do have to insist on payment as per the previously agreed schedule, otherwise we'll have to pass this over to our legal department.
