I feel like I have zero idea what I'm doing when I'm interviewing potential candidates

Tempted to setup interviews for myself at a bunch of other companies just so I can figure out what questions to ask/how to go about things/etc, but I feel like I'd just be wasting the time of the interviewers at those companies...

Does anyone have any suggestions on good stuff to ask/talk about/etc?
For reference I mainly interview people for Android/iOS/React Native/web/backend roles (although not all at once), but I'm looking for more generic tips if possible

    Perhaps the book "cracking the coding interview" could be useful.

    Perhaps to speak about how to write clean code.
    Design patterns?
    Some useful things to use in this area of development?
    To discuss a bit a git, to check how he wields.
    May be some basics, how network works.
    Some interesting applications he made before?
    Well, the list could be continued.
