Most co-workers work on windows, vagrant makes it easier to deploy than docker.

For me, it's easier to update a vagrantfile than to make changes on live machine and take a new snapshot.
Also, I rather prefer people run tests on their personal machines, keeping dependencies up to date, and the ease to destroy the testing environment when they don't need it. -
And then you switch to Nginx and forget completely about those files even existing!

That's what you get for a first job, and you'll also learn academics aren't exactly corporate or even startup business.
If you're that good and prove yourself worthy, I'm sure you'll get a raise in just a couple of months, it happent to a few people I know. -

For me, cooking makes the cut when I need to stop for a while and take my mind off a bug or problem. When I get back to it, my brain seems to work quite better!

We used our own implementation of JWT for the effect, if it helps.
There's plenty of libraries to integrate it to all major languages. -
Subdomains sound like the simpler option, but might become an issue in the future.
Where I work, we have an unified dashboard for all our products and the very first approach was to use sub domains, but when a client asked to merge and share contents between accounts, we had to go for a complete redesign.
So, we built an ACL to allow us to customise every single variable, with layouts based on templates, so we can customise every single aspect of each view.
That may sound to over complicate a simple task, but we could have spared spending thousands of euros in a full redesign... -

That's not that unusual, on my current job I've had to do it already twice, due to final users' complaints for not seeing the flashy animation as expected.
