Let Them figure it out.

This is true when considering casual user interfaces---and those are the ones that seem to get all the attention.

However, if you are working with the same UI for hours a day (e.g. booking clerk) then an efficient, terse UI that requires a few hours of training may be exactly what is required.

Last thing a data entry clerk needs is a point and click GUI.

Of course, if you can meet both requirements at once then great. But, easier said than done.
