"Best Handbook Award" goes to Gentoo Linux.
But those two aren't the ideal choice for Windows users, as both have a rather steep learning curve.
I'd therefore second Ubuntu. Or, if you want the real soft option, Linux Mint. -
Ubunti & Fedora have pretty solid documentation.OpenSUSE as well. So does Debian and Arch albeit they are a bit harder to use. Won't even recommend Gentoo since it will make a Linux newcomer feel lots of frustration.

Also no matter where you decide to start, don't let yourself give way to feeling overwhelmed. There are going to be new concepts, but in time things will make sense. Maybe start with Mint (Cinnamon) coming from Windows. ✌️
