It's not exactly VPN, but it's worked well for me.
It takes a couple hours to setup properly, and you can quickly change ports if needed. -

I've never gotten burned running upgrade on an LTS version of Ubuntu. (except with Nvidia drivers-- totally different rant)
It's good to snapshot production servers before running upgrades. Shit happens. -

You might consider backing up a snapshot of your production server before restart. I personally use Veeam, it's saved my bacon multiple times. -

I don't know the particulars of your network, VPNs can be a right bastard to keep open on rural copper.
You might have a look at Guac-Dev. It takes some toe stubbing to setup the server, but once done you can redirect rdp over https. Put simply, remote desktop through your browser. -
You can usually rent a room close to universities. Students usually don't have the money for single apartments, so they'll split the bill instead. 10 hours work a week should be enough to cover basic bills. You can also check out low income assistance, for food, medical insurance etc.
