Because it knows you will be the first to complain when it breaks when the released a patch for it months before but you didn't update.

you need to open the Store, and kill it from doing updates aswell.

You can remove the store itself with powershell

Find the program in start menu called store or Microsoft store

When it finally loads, click on the 3 dots top right, and in downloads / updates you should have some more settings 😏
