X11 is the version 11 of X.org server. The terms X, X11 and X.org are usually used interexchangeably (albeith inaccurately). I also heard the X11 protocol that the software of the same name implements. It's all the same thing.
X is the most important display server in Linux (and probably also in other Unix's).
Let's say it's the "graphical engine", it's what graphical environments, for example window managers, run on top of.
I'm not at all advanced in it, I just know this from experience+googling.
