So. Here's a cooking thread.

Please behave nicely, get ya favorite recipes out or your "my brain is melting and I randomly chop sueyed hot cooked this stuff together and it was awesome" creations.

    Today I made a simple winter dish:

    Cauliflower - Parsley root - Gratin

    Precook the cauliflower (1 large is more than enough) for 5 mins, slice the parsley root thin (5 mm and less), throw them in a casserole. I use 2-3 parsley roots depending on the size of the cauliflower.

    Make a simple roux, I usually use olive oil (8 table spoons) and flour (3-4 table spoons). Heat up the olive oil gently - less than medium heat, takes some time, but it's easier. When the olive oil is hot, grab a whisk and slowly add the flour. You don't need to apply force, just mix it thoroughly. Add roughly 300 - 400 ml chicken broth (less = thicker), 200 ml full fat milk.

    Never use cold milk. Always warm milk, otherwise it becomes a chunky mess.

    Preheating for a min in microwave is enough.

    After adding all components together you get a wonderful white thick sauce, add salt / pepper / nutmeg.

    On low temp, let it stay for a while, then just pour it over the parsley root and cauliflower.

    Add some good cheese, pop it in the oven for 30 mins (180 degrees celsius in an convection oven).

    Tip: Parsley root can be eaten raw. It's a slightly spicy flavor that goes well with the rather creamy roux. You can add a lot of stuff to a roux, but I like it rather simple ;)

    The recipe can be extended to quite a lot of stuff, I love basic recipes. Just throw in what you like - in winter you get a ton of root vegetables that you can just throw in or you just use the roux as a sauce.

    Making a beef stew right now and I was out of wine. The LC didn't open until noon but I wanted to slow braise, so I went with beef stock and balsamic vinegar.

    Balsamic vinegar is WAY more potent then I realized! Hopefully I can save this with veg and sugar. Wish me luck!

    I’ve just finished making an Indian dish called Poha and it’s easy to make. This is my particular recipe, the way I like it.

    Ingredients: Flattened Rice, Green Chillies, Curry Leaves, Peanuts, Jeera (Cumin Seeds), Onion, Peanuts, Coriander, Turmeric powder (I’m out of these last two this time.)

    Procedure:

    1. Soak the flattened rice in water for about a minute or until the rice becomes soft, then drain all the water and let it sit. Don’t soak for too long as we don’t want the flattened rice to turn into paste.

    2. Heat up a pan, add vegetable oil and stir fry the chopped up vegetables, jeera, curry leaves and peanuts for a little while.

    3. Now add the flattened rice (which should’ve softened up nicely by now) and stir fry the whole shebang. Add a bit of salt to taste and continue cooking. You can let it cook for a while with the lid closed.

    Additional ingredients: People often also add potatoes and carrots and tomatoes and other vegetables they like.
